Ingredients:

  • ½ cup oil
  • 2 eggs
  • 1 cup sugar
  • 1¼ cups grated carrots
  • 1¾ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¾ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ½ cup walnuts

Frosting Ingredients:

  • 200g cream cheese
  • 250g sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1 teaspoon butter

Preparation:

  1. In a large bowl, beat sugar, eggs, and oil with an electric mixer.
  2. Add grated carrots and mix well.
  3. Sift all dry ingredients together and add them to the mixture, stirring well. Then, add walnuts and mix with a spoon.
  4. Pour the mixture into a greased baking pan.
  5. Bake in a medium-heated oven (about 30-45 minutes).
  6. For the frosting: Beat butter, milk, vanilla, sugar, and cream cheese with an electric mixer.
  7. Once the cake has cooled, spread the frosting over the top and store it in the fridge.
