Carrot Cake
Ingredients:
- ½ cup oil
- 2 eggs
- 1 cup sugar
- 1¼ cups grated carrots
- 1¾ cups flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ¾ teaspoon nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
- ½ cup walnuts
Frosting Ingredients:
- 200g cream cheese
- 250g sugar
- 2 tablespoons milk
- 1 teaspoon vanilla
- 1 teaspoon butter
Preparation:
- In a large bowl, beat sugar, eggs, and oil with an electric mixer.
- Add grated carrots and mix well.
- Sift all dry ingredients together and add them to the mixture, stirring well. Then, add walnuts and mix with a spoon.
- Pour the mixture into a greased baking pan.
- Bake in a medium-heated oven (about 30-45 minutes).
- For the frosting: Beat butter, milk, vanilla, sugar, and cream cheese with an electric mixer.
- Once the cake has cooled, spread the frosting over the top and store it in the fridge.
Mini Carrot Cakes with Cream Cheese Frosting
Cake Ingredients:
- 2 eggs
- 2 tablespoons raisins
- 1 teaspoon baking powder
- 1 teaspoon lemon juice
- ½ teaspoon liquid vanilla
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1½ cups finely grated carrots
- 1½ cups flour
- 1 cup sugar
- ½ cup oil
- ¼ cup crushed walnuts
Cream Cheese Frosting Ingredients:
- 1 egg
- 2 tablespoons flour
- 1 teaspoon liquid vanilla
- ¼ cup fine sugar
- 150g soft cream cheese
- Powdered sugar or cinnamon for garnish
Preparation:
- Preheat the oven to 180°C (350°F) and place cupcake liners in muffin tins.
- In a deep bowl, sift together baking powder, baking soda, flour, cinnamon, and salt. Set aside.
- In a mixing bowl, combine lemon juice, sugar, oil, eggs, and vanilla. Beat for 30 seconds.
- Add walnuts, flour mixture, carrots, and raisins. Mix for another 30 seconds or fold manually.
- Pour batter into prepared muffin cups.
- Prepare the frosting: In a deep bowl, mix cream cheese, vanilla, sugar, egg, and flour until smooth.
- Spoon the frosting over the cupcakes.
- Bake for 15-20 minutes until set.
- Let cool completely before serving. Garnish with powdered sugar and cinnamon.
Carrot Cake with Walnuts
Ingredients:
- 2 cups flour
- 1 cup sugar
- ¾ cup oil
- 4 eggs
- 1 teaspoon vanilla
- ¼ cup water
- 1½ teaspoons baking powder
- 1½ teaspoons baking soda
- 2 teaspoons cinnamon
- A pinch of salt
- 1 teaspoon nutmeg
- 2 cups grated carrots
- ¾ cup walnuts
- Butter (for greasing)
Frosting Ingredients:
- 1 package cream cheese
- 1 tablespoon lemon juice
- Cream powder
- ¼ cup heavy cream
Preparation:
- Beat sugar and oil together, then add vanilla and eggs, mixing well.
- Gradually add all dry ingredients except butter, walnuts, and carrots.
- Grease a baking pan with butter and dust with flour. Pour in the batter and fold in walnuts and carrots.
- Bake at 180°C (350°F) for about 45 minutes. Once baked, spread the frosting on top.
- For the frosting: Whip cream powder and heavy cream together. Add cream cheese and continue whipping until smooth.
- Stir in lemon juice and mix until well combined.
