Classic Cheesecake

Ingredients:
  • 1 ½ cups of biscuit crumbs
  • ½ cup of white sugar
  • ¼ cup of melted butter
  • 5 cups of cream cheese
  • 5 eggs
  • 2 egg yolks
  • 1 ¾ cups of white sugar
  • ⅛ cup of all-purpose flour
  • ¼ cup of heavy whipping cream
Instructions:
  1. Preheat the oven to 200°C (392°F).
  2. Mix the biscuit crumbs, white sugar, and melted butter together, then press the mixture into a baking pan.
  3. In an electric mixer, combine cream cheese, eggs, and egg yolks, blending until smooth. Add white sugar, flour, and heavy cream, continuing to mix until fully combined.
  4. Bake in the preheated oven for 10 minutes, then reduce the temperature to 100°C (212°F) and bake for another hour.
  5. Remove from the oven and let it cool slightly before placing it in the fridge for several hours. Serve chilled.

Blueberry Cheesecake

Ingredients:
  • 1 ½ cups of crushed salted biscuits
  • ¼ cup of unsalted melted butter
  • 1 tablespoon of honey
  • 90g soft butter
  • 200g cream cheese
  • ½ cup of powdered sugar
  • 1 cup of canned blueberries
  • 2 cups of whipped cream
  • Crushed salted biscuits for garnish
  • Fresh blueberries for decoration
Instructions:
  1. Prepare the crust: Mix crushed salted biscuits, melted butter, and honey. Press the mixture firmly into the bottom of a cake pan. Bake at 170°C (338°F) for 4 minutes.
  2. Prepare the filling: Whip butter, cream cheese, and powdered sugar together until fluffy. Spread the mixture over the crust and refrigerate until firm.
  3. Spread a layer of blueberry topping over the cheesecake filling.
  4. Cover with whipped cream and refrigerate until set.
  5. Garnish with crushed biscuits and fresh blueberries before serving.

No-Bake Chocolate Cheesecake

Ingredients:
  • 400g cream cheese at room temperature
  • 50g butter
  • 24 chocolate cream-filled biscuits
  • 1 can of cream (Qishta)
  • ½ cup of white sugar
  • 2 packets of powdered cream
  • ½ cup of warm liquid milk
  • 1 tablespoon of gelatin
  • 50g melted chocolate
  • 1 cup of crushed chocolate balls
  • 150g melted chocolate for topping
  • ¼ cup of cream
  • 25g butter
Instructions:
  1. Crush the chocolate biscuits and mix them with butter in a food processor. Press into the bottom of a cheesecake pan to form an even crust.
  2. In a large bowl, beat the cream cheese with an electric mixer. Add sugar, cream, and powdered cream, mixing well.
  3. Dissolve gelatin in warm milk, then pour it into the cream cheese mixture, blending thoroughly.
  4. Add 50g of melted chocolate and mix well. Stir in the crushed chocolate balls.
  5. Pour the cheesecake mixture over the crust and refrigerate for 4 hours.
  6. Melt 150g of chocolate using a double boiler. Mix with butter and cream until smooth.
  7. Pour the melted chocolate over the cheesecake and allow it to set before serving.
