Marinating grilled meat is one of the most important steps in grilling beef or chicken, as the marinade enhances the meat’s flavor and tenderness. There are several ways to marinate meat before grilling at home. Below are different methods for preparing the perfect marinade:
Classic Meat Marinade
Ingredients:
- 1 kg boneless meat, cut into cubes
- 1 finely chopped onion
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp ground spices
- 2 tbsp lemon juice
- 1 tbsp vinegar
- 3 tbsp olive oil
Instructions:
- Wash and pat dry the meat, then place it in a deep bowl.
- Add all the ingredients and mix well, ensuring the marinade coats all the meat pieces.
- Cover the bowl with plastic wrap and refrigerate for at least 2 to 4 hours.
- Remove the meat from the fridge, skewer it onto grilling sticks, and it’s ready for grilling.
Tomato Marinade
Ingredients:
- 1 kg boneless lamb or beef, cut into cubes
- 1 onion, blended in a food processor
- 1 tsp salt
- 1 tbsp black pepper
- 1 tsp ground spices
- 2 tbsp lemon juice
- 1 tbsp white vinegar
- 2 tbsp yogurt
- 2 tsp tomato sauce
- 2 tbsp olive oil
Instructions:
- Wash and dry the meat, then place it in a deep bowl.
- Add all the ingredients and mix well to evenly coat the meat.
- Cover with plastic wrap and refrigerate for at least 2 to 4 hours.
- Remove the meat from the fridge, skewer it, and add an onion and tomato piece between each meat chunk.
Shish Kebab Marinade
Ingredients:
- 2 tbsp olive oil
- 1 finely chopped onion
- A pinch of chopped parsley
- 1 tsp black pepper
- Salt to taste
- 1 tsp cumin
- 1 tbsp vinegar
- 2 cloves of minced garlic
- 750g cubed meat
Instructions:
- Mix olive oil, black pepper, cumin, vinegar, garlic, chopped onion, and parsley.
- Cut the meat into small cubes, place it in a bowl, and coat it with the marinade.
- Let the meat marinate for 1 to 2 hours to absorb the flavors.
- Skewer the meat and grill it over prepared charcoal.

Soy Sauce Marinade
Ingredients:
- 1 tbsp vinegar
- ¼ tsp mixed spices
- Salt to taste
- 2 tbsp lemon juice
- 2 tbsp soy sauce
- 1 tbsp mustard sauce

- Mix all the ingredients together and marinate the meat for 1 to 2 hours.
