Spicy Noodles Recipe
Ingredients:
- 1 cup coarsely chopped onion
- 8 oz mushrooms, chopped
- 2 Portobello mushrooms, washed and sliced
- 10 oz rice noodles, cooked
- ¼ cup sesame oil
- ½ cup hot red curry paste
- Salt and pepper to taste
Optional Add-ons:
- 2 tbsp tamari sauce
- 4 green onions, chopped
- 2 garlic cloves, minced
Instructions:
- Heat sesame oil in a large pan. Add the onions and both types of mushrooms.
- Sauté for about 4 minutes, then add the cooked noodles and red curry paste. Season with salt and pepper.
- Add minced garlic and tamari sauce.
- Cook for another 8 minutes over medium heat, stirring occasionally.

Spicy Korean Noodles
Ingredients:
- 16 oz rice noodles
- 3 tbsp soy sauce
- 3 tbsp hoisin sauce
- 4 tbsp honey
- 2 tsp spicy garlic sauce
- 2 garlic cloves, minced
- ⅛ – ¼ tsp red pepper flakes (adjust to taste)
- ¼ cup sesame oil
- 2 cups shredded carrots
- 1 cup roasted salted peanuts
- ½ cup fresh cilantro, chopped
- 2 tbsp green onions, chopped
- Sriracha sauce (to taste)
Instructions:
- Bring a large pot of water to a boil and cook the noodles for about 6 minutes.
- Meanwhile, in a small bowl, mix soy sauce, hoisin sauce, honey, spicy garlic sauce, minced garlic, and red pepper flakes.
- In a large pan over medium heat, warm the sesame oil and add the sauce mixture, stirring until the garlic softens.
- Drain the cooked noodles and immediately toss them in the pan with the sauce.
- Top with shredded carrots, peanuts, cilantro, green onions, and sriracha sauce.
- Mix well and serve hot.
Spicy Vegetable Noodles
Ingredients:
- 10 oz soba noodles
- 1 tbsp oil
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- 1 carrot, diced
- ½ cup red cabbage, chopped
Sweet & Spicy Sauce:
- ¼ cup soy paste
- ¼ cup water
- 1 tbsp sesame oil
- 1 tbsp white rice vinegar
- 1 tbsp maple syrup
- 1 tsp sriracha sauce
- 2 tsp cornstarch
Instructions:
- Prepare the sauce: In a small bowl, mix soy paste with water, then add sesame oil, rice vinegar, maple syrup, sriracha, and cornstarch. Stir until smooth. Adjust sriracha and maple syrup to taste. Set aside.
- Bring a large pot of salted water to a boil and cook the noodles according to package instructions.
- While the noodles cook, heat oil in a large non-stick pan over medium heat. Add garlic and ginger, stirring for 2-3 minutes.
- Add both types of bell peppers, carrots, and red cabbage. Stir-fry for 5-8 minutes.
- Once the vegetables are tender, drain the noodles and add them to the pan. Pour in the sweet & spicy sauce and stir well to coat.
